My Best Pizza in Tuscany & Umbria: A Slow Journey to the Perfect Slice

If you’re staying in Tuscany or Umbria and dreaming of the perfect pizza—wood-fired, slow-risen, and topped with love—this post is for you. I’ve personally tested (yes, happily!) the best pizzerias near our villas, and these are my favorites. Some are featured in Gambero Rosso, others are local secrets—but all are worth a detour.

1. 320 Gradi – Città della Pieve (Umbria)

Artisan pizza meets rural elegance.

This gem is just a few minutes from our villas, and it’s no surprise that it’s one of the most talked-about in Umbria. The dough is fermented for 72 hours, the ingredients are local, and the atmosphere is laid-back and welcoming.

Try: the margherita with local buffalo mozzarella, or one of their seasonal white pizzas.

2. Mediterranea – Perugia (Umbria)

Pizza with a soul—and a view.

A pizzeria that brings together Slow Food principles and modern creativity. Mediterranea is known for its long fermentation, regional toppings, and one of the best gluten-free crusts in central Italy. It’s also been recognized in the Gambero Rosso guide.

Try: the pizza with Norcia sausage and truffle cream—or ask for the vegan special.

3. Rosso Vivo – Chianciano Terme (Tuscany)

A newer addition to the pizza scene in southern Tuscany, Rosso Vivo is making waves for its perfectly blistered crusts and dedication to top-quality ingredients. It’s an easy drive from Montepulciano or our villas in Val d’Orcia.

Try: the “Rosso Vivo” house special with spicy salami and caramelized onions.

4. Lievito – Tavernelle (Umbria)

Our local favorite—and we helped make it happen!

Lievito is a labor of love that celebrates everything we stand for: slow food, organic ingredients, and warm hospitality. The dough is made with stone-ground flours, the toppings are from local farms, and the vibe is pure Umbrian joy. Plus, it’s right around the corner from home.

Try: the potato and rosemary pizza with truffle oil drizzle.
